Rossler's Blue Cord Barbecue is a veteran-owned business located in Killeen, TX. Since 2016, caterer and pitmaster Steven Wayne Rossler Jr. has been serving up true Central-Texas-style BBQ. We smoke our meat in an offset stick burner and season it with salt, pepper and a whole lot of love.


Steven served 20 and a half years as an army non-commissioned officer infantryman. He was awarded the Bronze Star Medal with Valor and has deployed to both Iraq and Afghanistan. His main goal with Rossler's Blue Cord Barbecue is to pay homage to his family name and military service. Steven lives every day remembering the fallen, and he's proud to stand next to everyone who has served, past, present and future.

At Rossler's Blue Cord Barbecue, our goal is to offer our customers authentic Texas BBQ and friendly service. We're passionate about cooking and it's a dream come true to open our BBQ Food Truck and Catering Business so we can share this passion with the Harker Heights, TX community. From the day we first opened our BBQ business, we've made a promise to ourselves and to our customers to serve the most fresh and delicious barbecue using only the finest ingredients and a commitment to quality. We continue to uphold this promise by making sure that every dish that leaves our window is the best it can be. 

What does "blue cord" mean? During the Korean War, General "Lightning Joe" Collins, Chief of Staff for the Army, asked a group of advisers what could be done to improve the morale of the fighting infantrymen. They decided to award infantrymen special insignia so that everyone would know they would be fighting on the front lines. A light-blue cord was worn over the right shoulder of both officers and enlisted men. They also created light-blue plastic disks to be placed behind the metal "crossed rifles" infantry insignia disks and service cap insignia. The new enhancements were first worn by the 3rd US Infantry Regiment ("The Old Guard"). The light-blue cord and disks became standard for all Infantrymen in 1952.
